Supervise, coordinate and schedule the activities of the cellar workers. Work with the head brewer to create packaging plans and cellaring schedules. Monitor fermentation, conditioning, and dry hopping. Keep extensive records and manage inventory and bottling demands. Prepare production reports. Train staff in job duties and safety procedures. Offer the occasional tour. Take daily logs and pH readings. Transfer beer between tanks. Cap tanks as the beer nears the end of fermentation. Purge fermenter and brite tanks.
